It’s hot out there — and we have just the thing to cool everyone down.

This 4th of July, we’re sharing a recipe that has quickly become one of our absolute favorites: a no-bake Ice Cream Sandwich Flag Cake that is as easy to make as it is delicious to eat. It’s cool, it’s creamy, it’s festive, and here’s the best part — even your toddler can help put it together.

Yes, really. Your two-year-old can make this cake with you. And the joy on their face when dessert comes out and everyone oohs and aahs over what they helped create? That’s a 4th of July moment that stays with a child for a lifetime.

So pull up a stool, grab the parchment paper, and let’s make something wonderful together.


Why Cooking Together Is About So Much More Than Food

Before we get to the recipe, we want to pause for just a moment — because this kind of simple kitchen time is one of the most powerful things you can do with your little one.

When your child stands next to you at the counter laying down ice cream sandwiches and arranging blueberries into a flag, something quietly beautiful is happening:

They are building confidence. A child who helps create something — and then watches their whole family enjoy it — feels genuinely capable. That feeling is a seed that grows.

They are practicing positive character. Contributing to the family, following simple steps, waiting patiently for the cake to freeze — these are real lessons in responsibility, helpfulness, and self-regulation. No worksheets required.

They are storing up quality time they will carry with them forever. Children don’t remember the elaborate things we do for them nearly as much as they remember the everyday moments of feeling close to us. Standing side by side in a warm kitchen on a holiday afternoon, doing something real and fun together — that is a memory being made right now.

And here is something we want you to hear clearly: it does not have to be perfect. The blueberries do not need to be in a perfectly even square. The strawberry stripes do not need to be ruler-straight. The whipped cream does not need to be smooth. A slightly lopsided flag cake made with a three-year-old is infinitely more precious than a perfect one made without them.

What You’ll Need

  • 2 packages of ice cream sandwiches
  • Chocolate syrup
  • 2 tubs of Cool Whip (8 oz each)
  • Fresh strawberries
  • Fresh blueberries
  • Heath bits (optional, but highly recommended!)
  • A 9x13 casserole dish
  • Parchment paper

No oven. No mixer. No fancy techniques. Just a few simple ingredients and a willing little helper.


How to Make It

Step 1: Prep your dish.
Line your casserole dish with parchment paper, letting the edges hang over the sides — those edges are your secret weapon for lifting the cake out after freezing. Give it a drizzle of chocolate syrup across the bottom.

Step 2: First layer of ice cream sandwiches.
Lay your first layer of ice cream sandwiches down snugly, side by side. Let your little one help slide them into place — this is a great job for small hands! Drizzle chocolate syrup generously across the top. If you’re using Heath bits, sprinkle them on now for a wonderful crunch in the middle.

Step 3: Second layer of ice cream sandwiches.
Add your second layer of ice cream sandwiches right on top.

Step 4: Spread the whipped cream.
Spread a full tub of Cool Whip generously across the top of the cake, smoothing it out flat. Keep the second tub in the fridge — you’ll use it to frost the sides after freezing.

Step 5: Decorate the flag together.
Here is where little ones truly shine! In the top left corner, have your child arrange fresh blueberries in a square for the blue field of stars. Then lay sliced strawberries horizontally across the rest of the top to create the red stripes. Stand back together and look at what you made — it’s going to be beautiful.

Step 6: Freeze for 3 hours.
Cover loosely and pop it in the freezer. Perfect time to head outside for the parade, water balloons, or a rest before fireworks!

Step 7: Lift, finish, and serve.
Lift the cake out using the parchment paper edges and set it on a board or tray. Frost the sides with the remaining Cool Whip. Slice, serve, and enjoy every single bite.


A Little Note on Letting Go of Perfect

When you’re making this with your toddler or preschooler, resist the urge to fix what they do. Let them place the ice cream sandwiches, even if they’re crooked. Let them arrange the blueberries, even if the square looks more like a cheerful blob. Let them drizzle the chocolate syrup — yes, it might be more than you planned for, and that’s okay.

The cake with the wobbly blueberries and the extra chocolate syrup? That’s the one they’ll remember helping make. That’s the one that belongs to them. And years from now, when they’re grown and making this same cake with their own children, they’ll remember standing next to you on a hot July afternoon feeling like they could do anything.

That memory is worth every extra chocolate drizzle.
